½ c sugar
½ t salt
1¼ c milk
¾ t vanilla
¼ c cornstarch
1½ c unsweetened coconut milk (13.75 oz)
4 egg yolks
1 c coconut

Directions:
Directions:
Mix sugar, salt, and cornstarch.
Add milk and coconut milk to the dry ingredients and stir until dissolved.
Cook on stove top on medium high stirring until starts to thicken.
Whisk eggs and add small amount of cooked mixture to eggs stirring to temper eggs then return to custard mixture.
Return to stove and bring to boil for 2 minutes.
Strain custard, then add vanilla and coconut.

This can also be cooked (following same instructions) in microwave.

Pour into baked pie shell and top with meringue or whipped cream with toasted coconut sprinkled on top.
