3-4 medium eggplant, peeled and cubed
2-4 eggs, lightly beaten
½ cup milk
1 medium onion, grated
1 cup cracker crumbs
1 cup grated cheddar cheese

Directions:
Directions:
Boil eggplant until tender and mushy-like. Drain well in strainer. Return to pan.

Stir in eggs, milk, onion and cracker crumbs to thicken. Add cheese. Stir until well blended.

Lightly spray baking dish to accommodate mixture. Bake at 350º for 45-60 minutes until golden brown on top and solid texture.
