White cheese - Monterrey Jack
Oil for frying tortillas

Directions:
Cook Chicken. The best way to cook it is to sauté it in strips with olive oil, onion, green pepper and minced garlic. Use breasts that are cut up or you could substitute rotisserie chicken if you are short on time. You could even pull the rotisserie chicken off the bone and sauté it for a bit with the onion and green pepper. If you do it that way, sauté the green pepper, onion and garlic for a few minutes before you add the chicken, so that it is almost cooked before adding the chicken.
You can even use canned chicken if you are desperate.


Fry your tortillas briefly in vegetable oil.

Pour some of the sauce in the bottom of the casserole dish.

Roll the chicken and cheese up and pour a little sauce in the roll up.

Pour the sauce over the enchiladas, top with cheese and bake at about 375 until its all melty and yummy!
