1 cup all purpose flour
2 tsp baking powder
2 Tbsp. sugar
1/2 tsp. salt
3/4 cup milk
2 Tbsp. melted butter or margarine
2 eggs, separated

Directions:
Directions:
Mix flour, baking powder, sugar and salt in mixing bowl. Set aside. Stir together milk, melted butter and egg yolks. Whip egg white. Stir milk mixture into flour mixture and fold in egg whites. Batter should hold its shape, but not be too stiff. Bake on heated griddle, using 1/4 to 1/3 cup batter to make each pancake. Bake until cakes are full of bubbles and the undersurface is nicely browned. Lift the pancake with a turner and brown on the other side. Serve immediately with butter and warm maple syrup, honey or other favorite toppings.

For Buttermilk Pancakes: Use buttermilk in place of milk and replace baking powder with 1/2 tsp. baking soda.

For Whole Wheat Pancakes: Use 2/3 cup white flour and 1/3 cup whole wheat flour; omit sugar and use 2 Tbsp. molasses.

For Blueberry Pancakes: Add 1/2 cup blueberries, fresh or canned and drained to batter just before baking on griddle.
