8 oz. button mushrooms
1 garlic clove, minced
10 oz. box frozen spinach, thawed
4 large eggs
1 cup milk
2 oz. feta cheese, crumbled
1/4 cup Parmesan cheese
1/2 cup shredded mozzarella
salt and pepper to taste

Preheat oven to 350º.

Squeeze excess moisture from spinach. Clean mushrooms and slice thinly.
Saute mushrooms and garlic in a skillet sprayed with non-stick cooking spray until mushrooms are soft and moisture has evaporated (5 - 7 minutes). Season with salt & pepper.
Spray a pie plate with non-stick cooking spray. Place the squeeze-dried spinach in bottom, followed by the mushrooms and feta cheese.
In a medium bowl, whisk the eggs, milk and Parmesan cheese. Season lightly with pepper. Pour over vegetables. Top with shredded mozzarella.
Place pie plate on cookie sheet for easy transfer in and out of the oven. Bake for 45 - 55 minutes, or until top is golden brown.
