1 lb pork loin, trimmed
salt and pepper
½ c all-purpose flour
3 eggs, beaten
2 c panko bread crumbs
3 T vegetable oil
3 T butter
¼ c dry white wine
2 T fresh lemon juice
2 T heavy cream
6 T butter
2 T chopped parsley
4 lemon wedges

Slice pork into eight 1 inch thick pieces. Pound each piece with a meat mallet to ¼ inch thickness. Season with salt and pepper.

Place flour, eggs, and bread crumbs into three separate shallow dishes. Dredge each piece into first flour, then egg, then breadcrumbs. Place breaded pork on a place or baking sheet.

Heat oil and 3 tablespoons butter in a saute' pan over medium-high heat. Saute' pork until golden, 2 to 3 minutes on each side. Remove from pan and keep warm in a 200º oven.

Deglaze pan with wine, add lemon juice and simmer 3 minutes. Add heavy cream and simmer until reduce by half; about 1 minute. Off heat, whisk in butter 2 tablespoons at a time, then stir in parsley.

Spoon sauce over medallions to serve.
