1 - 4-5 lb boneless top round, top sirloin roast or any cheap roast
Salt & pepper
1 Tbsp oil
4 Tbsp butter
2 carrots peeled and cut into 2” pieces
1 onion peeled and cut into ½” rounds
1 celery rib cut into 2” pieces
½ c flour
1 tsp tomato paste
2 cans beef consommé
1 ½ c water

Heat oven 225º

Pat roast dry and rub with 2 tsp salt and wrap in plastic wrap and refrigerate at least 1 hour up to 24 hours.

Pat roast dry rub with 2 tsp pepper. Brown roast all over in oil in large oven proof skillet. Heat oil over med hi heat, brown 8 – 12 minutes. Transfer to plate. Add butter to skillet cook carrots, onions & celery 6 – 8 minutes until browned. Add flour and tomato paste and cook until flour is golden and paste begins to darken, about 2 minutes. Off heat put vegetables to center of pan. Place roast on top of vegetables, transfer to oven.

Cook to 135 degrees med rare 2 ½ - 3 hours. Transfer roast to carving board and tent with foil.
Return skillet with vegetables to med-high heat and cook until deep golden brown. Slowly whisk in consommé & water, bring to boil. Reduce heat and simmer until thickened. Season with salt and pepper. Thinly slice roast against grain.
