6 peeled potatoes
2 cups grated parmesan cheese, divided
3 teaspoons salt, divided (optional)
4 tablespoons olive oil divided
1 sweet onion diced
1 Lb. ground beef
14 ˝ oz fire roasted diced tomato, drained
4 tablespoons fresh parsley, chopped, divided
1 teaspoon paprika
˝ teaspoon pepper
6 cups spinach
2 minced cloves garlic
1 cup ricotta cheese
1 cup shredded mozzarella cheese

Preheat oven to 350˚F (180˚C).
Using potato mandolin cut the potatoes into slices ⅛-inch (3 mm) thick. On a parchment paper-lined baking sheet, sprinkle half of the parmesan cheese and spread until it is evenly covering the parchment paper. Place the potatoes over the parmesan so each potato slice is overlapping the previous potato both vertically and horizontally. Try using same size for each row until the entire pan is filled with potatoes. Sprinkle to rest of the parmesan evenly over the potatoes. Bake until golden, flexible and slightly crispy. In the meantime, heat oil and sauté onions until caramelized, add the ground meat, break apart with wooden spatula, add the tomatoes, parsley, paprika, salt & pepper to taste. Once browned, drain and remove from heat. While cooking the meat, heat oil and garlic in separate pan, add the fresh spinach with touch of salt (optional) and cook until wilted (roughly 2 minutes) and remove from heat, let rest and cool. In a large bowl combine the spinach with ricotta cheese and spread it over the potato sheet, followed by the beef and tomato mixture, sprinkled with mozzarella cheese. Take one end of the potato sheet holding the parchment paper begin rolling upward, making sure the ingredients are not coming out the ends and the roll is tight. Place back on baking sheet and bake for about 15-20 minutes. Sprinkle with finally chopped parsley and parmesan cheese immediately out of the oven and serve hot.
