Weeknight Bolognese Recipe

2 T olive oil
1 lb lean ground beef
4 cloves garlic, minced
1 T dried oregano
pinch of red pepper flakes
1 1/4 cup red wine, divided
1 28 oz can crushed tomatoes
2 T tomato paste
salt and pepper
3/4 lb dried pasta ( I use spaghetti)
1/4 cup chopped fresh basil leaves
1/4 cup heavy cream
1/2 cup freshly grated parmesan cheese

Directions:
Directions:
Heat the olive oil in a large skillet and add the ground beef and cook until browned and crumbly, 5-7 minutes. Stir in the garlic and the oregano and the pinch of red pepper flakes. Cook for 1 minute more. Pour 1 cup of the red wine into the skillet and stir, scraping up any brown bits from the pan. Add the tomatoes, tomato paste, 1/2 tsp of salt and a bit of pepper. Stir till combined, bring to a boil and then lower the heat to a simmer for 10 minutes.

Meanwhile bring a large pot of water to a boil and add the pasta and cook according to package directions. While the pasta cooks, finish the sauce adding the basil, cream and the remaining 1/4 cup of red wine. Simmer for another 10 minutes stirring occasionally. When the pasta is cooked, drain it and add it to the skillet and stir well. Add the parmesan and serve immediately.
