1 box LEMON cake mix (with pudding in the cake mix)
1 (8 oz) container Cool Whip, completely thawed
1 egg, beaten - 2/3 c powdered sugar (for rolling)

Try making these cookies with other flavors of cake mixes
with pudding...strawberry, orange, etc.

Preheat oven to 350º. Line large cookie sheet with parchment paper. In a large bowl combine cake mix with 1 beaten egg, mixture will be crumbly. Fold in thawed Cool Whip till well combined. Dough will be thick & sticky. Using a small melon scoop, drop balls into the powdered sugar, roll to coat. Place on cookie sheets 2 " apart. Bake 10-12 minutes till set & tops are crackled. Cool on pan for 5 minutes or so.
