1 1/4 lb boneless skinless chicken breast halves
4 oz fresh plum tomatoes
1 package (16 oz) bow tie pasta, cooked
8 oz garlic
5 1/2 tbsp olive oil
1 1/2 shiitake mushrooms
1 cup chopped green onions
1 teaspoon crushed red pepper flakes
2 cups chicken broth
4 oz cilantro, chopped, divided

Girl chicken, on covered grill; 6 to 8 minutes until chicken is no longer pink in center, turning chicken over halfway through cooking.

Refrigerate grilled chicken until cool enough to handle. Cut chicken into half inch cubes. Set aside.

Cut tomatoes into halves, remove stem and scrape out seeds with a spoon. Chop into small pieces to equal 2 cups. Set aside.

To peel garlic, trim off ends. Drop cloves and boiling water. Boil 5 to 10 second. Remove with a slotted spoon; plunge into cold water, drain. The skins will slip off cloves. Chop with the chef's knife into very small pieces.

Heat oil in large skillet over medium-high heat. Cook and stir garlic in hot oil until lightly browned. Add tomatoes, mushrooms, green onions and red pepper flakes. Cook and stir 2 minutes.

Add broth; simmer mixture to reduce slightly. Add chicken, pasta and half cilantro; heat through. Garnish with remaining cilantro.
