½ package of Mai Fun
3 Boneless Chicken Breasts
Cornstarch
1 t. Dry Mustard
4 T. Sugar
2 t. Soy Sauce
1 T. Sesame Oil
1/2 C. Salad Oil
6 T. Rice Vinegar
1 head Iceberg Lettuce
Toasted Sesame Seeds
Toasted Slivered Almonds
Green Onions, slice on a bias

Deep fry the Mai Fun in small batches (ti puffs up quite a bit). Coat chicken breasts with cornstarch and deep fry. Cool and cut into bite-sized pieces. Combine the next six ingredients together to make the dressing. Chop the cleaned and dried lettuce.

Using a very large bowl, Toss the lettuce, chicken and Mai Fun with the dressing. Toss in the remaining ingredients.

Enjoy!

* Dry the lettuce very well or the salad will have very little taste.

An acquaintance and restaurant owner asked my mom for this recipe. He placed it on the menus of two restaurants in Burlingame, CA. It became a very popular dish around town!! Mom never got credit for this really yummy salad.
