1/4 cup pine nuts
1 head cauliflower, finely chopped
1/2 cup shallot, finely chopped
1 tbsp red wine vinegar
2 tbsp honey or honey substitute
Olive oil
Salt and black pepper
Parsley, chopped

Directions:
Directions:
Place pine nuts in a large saute pan, turn heat to medium and toast for about 4 minutes and set aside.
Add a drizzle of olive oil to hot skillet until it shimmers.
Add the cauliflower to the hot skillet and season with salt and black pepper.
Add the shallots when the cauliflower begins to brown.
Continue to brown the cauliflower until it is cooked through, about 3-4 minutes.
Add the red wine vinegar, honey and reserved pine nuts. Cook for 2 more minutes.
Finish with a drizzle of olive oil, salt, black pepper and parsley.
