4 english muffins, split
8 bacon slices
water
8 eggs
1 pkg hollandaise sauce

Directions:

Arrange muffins, cut side up in greased 9 X 13 pan. Fry bacon until crisp. Break each piece of bacon in half and then place 2 halves on each muffin. Heat water in large saucepan until it simmers. Carefully break in eggs to poach until just set. Transfer and place each egg on bacon using slotted spoon. Make hollandaise sauce as instructed on pkg. Spoon onto eggs. Cover and chill overnight. In the morning, remove cover. Bake at 375º for 20-25 min. Makes 8 servings.
