2 cups pumpkin
2/3 cup oil (or 1 cup oil if you do not use the opt applesauce)
½ cup milk
½ cup apple sauce (optional)
3 cups flour
1 ¼ cups sugar (or 1 ½ cups if you do not use the opt applesauce)
3 tsp cinnamon
1 tsp salt
2 tsp baking soda
For the center mixture:
1- 8 oz softened cream cheese
½ cup sugar
1 tsp vanilla
1 Tbsp lemon juice (optional)

Directions:
Directions:
In a large bowl beat the first 5 ingred. Then add the dry ingred all at once until moist- do not over mix. Beat the centre mixture ingred together until smooth. Spoon half of batter in the muffin tins, then add about 1 Tbsp of cream cheese mixture in the center and top with the remaining batter. Top with lots of pumpkin seeds or a mixture of oats, seeds, etc. Bake at 350º for about 20 minutes in muffin tins sprayed with Pam-makes 2 dozen.
