3 pounds small whole beets
2 cups vinegar
1 cup water
1/2 cup sugar
1 teaspoon allspice
6 whole cloves
3 inch stick of cinnamon

Directions:
Directions:
Wash beets leaving on roots and one inch of tops.
In a large pot cover beets with boiling water and simmer for one hour.
Drain, slip off skins and trim beets.

In a large pot combine vinegar, water and sugar.
In a cheesecloth tie allspice, cinnamon and cloves. Add this pouch to the vinegar pickling mixture. Bring this mixture to a boil and simmer for 15 minutes.

Pack beats into hot sterile jars cover with pickling mixture leaving 1/2 inch space on top. Cover with lids.
