7/8 cup flour
1/2 teaspoon salt
1/2 cup milk
2 eggs
1/2 cup water
butter or drippings for baking pan

Directions:
Directions:
Ingredients must be at room temperature when they are mixed or they will not puff.
Sift flour into a bowl and add salt.
Make a well in the center and add milk.
Beat eggs until fluffy and add to batter, add water and beat until large bubbles rise to the surface.
Cover and refrigerate for 1 hour, then beat again.
Preheat oven to 400,
Divide butter evenly into the twelve cups of a muffin tin, about 1/2 teaspoon per cup. Place tin in oven to melt butter, 2 to 5 minutes. Remove tin from oven, and distribute batter evenly among buttery cups.
Bake in preheated oven 5 minutes. Reduce heat to 350 degrees, and bake 25 minutes more or until puffed and golden.
