Ingredients: • ½ cup (112 g) non-dairy (or dairy) butter or coconut oil melted • 40 g dark chocolate • ¾ cup brown sugar • 2 tbsp (14 g) of chia seeds + 6 tbsp (90 mL) water (or 2 eggs) • 1 tsp vanilla • ¾ tsp baking powder • ¼ tsp sea salt • ½ (48 g) cup cocoa powder • ¾ (102 g) cup flour • 30 mL non dairy milk (or dairy)

Directions:1) Preheat oven to 176 C 2) Mix chia seeds with water and let set (skip if using eggs) 3) Melt butter/ oil with dark chocolate in a large bowl in the microwave 4) mix in brown sugar, eggs/chia, and vanilla 5) add dry ingredients (flour, cocoa, sea salt, baking powder) and stir to combine. Add milk as needed to get proper consistency – should be thick but not crumbly. 6) Place in oiled square baking pan (8 in x 8 in or 9x9) and press batter into the pan until it fills the shape 7) Bake for 15 to 20 minutes – or until a toothpick comes out clean |

Notes: It took me a while to tweak this recipe from the original I found, and it may take you a bit of tweaking too. Sometimes recipes are highly dependent on your oven and I think this is one of those. There are loads of things you could add into these to make them suited to your tastes - banana, peanut butter, pecans, and more! These are easily made gluten free too if you want a dessert option that appeals to all your friends dietary needs!
