1 pound Italian sausage (casings removed)
1/4 cup butter or oil
6 cups coarsely chopped onions or leeks
3 tart apples peeled, cored and chopped
2 cups chopped celery
4 teaspoons poultry seasoning
2 teaspoons dried Rosemary, crushed
1 cup dried cranberries
12 cups diced bread (old/ dry)
1 1/3 chicken or turkey stock
salt and pepper to taste

Cook sausage, remove from skillet, remove grease
Add butter or oil to same skillet
Add onions, celery, apples and poultry seasoning cook until softened
Add rosemary, cranberries and cooked sausage
Mix all with the dried bread cubes, season to taste, moisten with stock
You can stuff the turkey, but I prefer to bake stuffing in a greased, covered casserole dish at 350 degrees for 45 minutes
Uncover until brown

Unbaked stuffing freezes well until needed
