Grilled Clams with Basil Breadcrumbs Recipe

1 1/2 c. panko style breadcrumbs, toasted
2 cloves garlic, minced
3 T. olive oil
2 T. fresh lemon juice (zest lemons, as well)
6 sun-dried tomato halves in oil, drained, and coarsely chopped
1/2 c. chopped basil
1/4 c. pine nuts, toasted
3/4 t. kosher salt
1/4 t. freshly ground black pepper
24 littleneck clams, scrubbed clean
2 1/2 T. melted butter
1 jalapeño, finely chopped (if desired)

Heat gas grill. Combine panko, garlic, olive oil, lemon juice and zest, sun-dried tomato, basil, pine nuts, salt and pepper in a large serving bowl. Set aside.

When the grill is hot, place the clams in 1 layer on the hot grate and close the grill top. Allow the heat to open the clams, they will open gradually for about 5 minutes. Using tongs, remove clams from the grill and place them in the bowl with the panko mixture. Toss the clams with the panko mixture. Drizzle with the melted butter, serve hot.

The Maida family loves steamed clams. Steaming them on the grill makes a mess of your grill, but it is a fun thing to do on a warm summer night. This recipe from Ina Garten adds a little something special versus the normal melted butter.
