1 1/2 cups all-purpose flour
1 cup sugar
3/4 cup cornmeal
1 tbsp. baking powder
1/2 tsp salt
2 large eggs
1/2 cup shortening
1 cup milk, divided

Directions:
Directions:
In a bowl, combine dry ingredients. Add eggs, shortening, and 1/2 cup milk; beat for 1 minute. Add the remaining milk; beat just until blended. Fill paper-lined muffin cups three-fourths full. Bake at 350º until muffins test done, 25 to 30 minutes.

Cutting the recipe in half doesn't hurt the taste at all.

I find these to be not to "cornmeally" just the right amount of cornmeal taste for the desired taste. These are sweet so if you don't want to eat a dessert muffin with your meal I would cut back on the sugar. Otherwise these great muffins.
