Lemon Butter

1 lemon, zested
1/4 tsp salt
1/4 tsp black pepper
4 ounces butter, room temperature

Whisk ingredients together and set aside.
 

Crispy shallots

2 large shallots, sliced into rounds
1/2 cup grape seed oil

Directions:
Combine the grape seed oil and shallots in a medium heavy saucepan over medium-high heat. Cook, stirring often, until the oil heats up and the shallots turn golden brown, 5 to 7 minutes. Transfer the shallots with a slotted spoon to several layers of paper towels to drain and crisp. Sprinkle with salt and pepper just before using.
 

Halibut

Marinade:
1/4 cup olive oil
2 tbsp lemon juice
1/4 tsp salt
1/4 tsp black pepper
2 large garlic cloves, smashed

4 halibut filets, 4-5 ounces each

Directions:
Directions:
Combine all marinade ingredients in an 8x8x2 inch baking dish.
Add fish and marinade for 15-20 minutes.

Preheat a large, dry skillet over medium high heat.
Add fish to the hot skillet and sear for 3 minutes, turn, and sear another 3 minutes.

Serve with a large dollop of lemon butter and top with crispy shallots.
