1 Tbsp olive oil
1 cup chopped yellow onion
1 quart chicken broth
1 can cannelloni beans, drained
1 can great northern beans, drained
1 (4 oz) can green chilies
1 Tbsp cumin
1 Tbsp chili powder
1 tsp garlic powder
1/2 tsp salt
1/8 tsp ground red pepper
2 cups shredded pepper Jack cheese
1/2 cup sour cream
3 cups chopped rotisserie chicken

Directions:
Directions:
In a large Dutch oven, heat olive oil over medium heat. Add onion; cook for 4-5 minutes, stirring frequently, until tender. Add chicken broth, beans, green chilies, chili powder, cumin, garlic powder, salt, and red pepper. Bring to a boil; reduce heat to medium-low, and simmer, uncovered, for 30 minutes, stirring occasionally. Add cheese and sour cream, stirring just until cheese is melted. Add chicken; cook for 2-3 minutes, or until chicken is heated through.
