3 eggs - room temp.
1 ¾ c. sugar
1 c. veg. oil
2 c. flour
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon
2 c. chopped apples, walnuts or pecans
1 c. nuts

Frosting:
1 8 oz. pkg. softened cream cheese
1 tsp. vanilla
3 c. sifted powdered sugar

Directions:
Directions:
Beat eggs and sugar until well combined. Add oil. Mix together the dry ingredients and add to sugar mixture. Mix together until combined. Fold in apples and nuts. Spread in a greased and floured 9 x 13 baking dish and bake at 350º for 40 min. or until golden brown and toothpick tests clean.

For frosting, beat together all ingredients until smooth and fluffy. Adjust thickness with milk or sugar and spread on cooled cake. You can garnish with chopped toasted nuts if desired.
