4 tbsp butter, divided
1/2 lb ground beef
3/4 cup onion, chopped
3/4 cup carrots, shredded
3/4 cup celery, chopped
1 tsp dried parsley
1 tsp dried basil
4 cups potatoes, peeled and cubed
3 cups chicken broth
1/4 cup all-purpose flour
1 1/2 cups whole milk
2 cups cheddar cheese, cubed (could use Velveeta)
1/4 cup sour cream

Directions:
Directions:
In a large pot, melt 1 tbsp butter over medium heat. Add onion, carrots, celery and beef. Stir until beef is brown. Stir in basil and parsley. Add broth and potatoes. Bring to a boil, then simmer until potatoes are tender, about 10-12 minutes. Melt the remaining butter in a separate pot and stir in flour. Add the milk, stirring until smooth. Gradually add milk mixture to the soup, stirring constantly. Bring to a boil and reduce heat to simmer. Stir in cheese. When cheese is melted, add sour cream and heat through. Do not boil.
