1 to 2 Tbs vegetable oil
3 lbs pork butt or shoulder, trimmed of fat and cut into bite sized pieces
salt, to taste
1 onion rough chopped
2 poblano peppers, diced
1 tsp dried oregano
1/2 tsp ground dried cumin
24 ounces jarred tomatillo salsa
1 cup chicken stock
1/4 cup chopped cilantro
1 cup sour cream

Directions:

1) Pre-heat the pressure cooker on Brown setting
2) Add one tablespoon of the oil and brown the pork pieces in batches, seasoning with salt and adding more oil as needed. Set the browned pork aside. Add the onion, poblano pepper and spices and cook for another 5 minutes. Add the salsa and the chicken stock, return the pork to the cooker, stir well and lock the lid in place.
3) Pressure cook on High for 15 minutes.
4) Let the pressure drop naturally and carefully remove the lid. Season to taste again with salt and stir in the cilantro. Serve over rice and beans, or alone with a dollop of sour cream on top.
