1 pound boneless, skinless chicken breasts
3 cloves garlic, minced
3 tsp canola oil
1/2 cup water
1/2 cup white vinegar
pepper
2 bay leaves
squirt of mustard
1 cup low-sodium soy sauce
3 cups cooked white rice

Directions:
Directions:
Sear chicken quickly on both sides. Add remaining ingredients. Bring to a boil, cover and reduce heat. Simmer until chicken shreds easily (about 45 minutes).
Serve over rice.
