1 lg. onion, chopped
4-5 c. beets, sliced
2-3 potatoes, cubed
2 qt. water
2 tsp. salt
2 tsp. onion powder
1 tsp. tarragon
1/2 tsp. coriander
1/2 tsp. cumin
1/4 tsp. celery seed
1/4 tsp. cardamom
1/4 tsp. fenugreek
1/2 c. raw cashews
water

Directions:
Directions:
Cook all veggies and seasonings with water until soft. Blend cashews in the blender with additional water to make a smooth cream. Also blend as much as half of the soup to make it thick and creamy. Add the cashews cream and blended soup into the pot. Add more water if needed for desired consistency. Garnish with fresh chives.

Beets are cleansing to the system, and help the body make good blood. They are so delicious, and who can resist the beautiful color? We sometimes add beets just to give a pink color to a potato salad or even icing for a dessert. Beets especially make me think of God. Probably because He loves us so much he gave His blood for us.
