6 c. water
1 c. dried elderberries or 3 c. fresh or frozen
2 inches fresh ginger, peeled and sliced
2 pears, diced
1/2 tsp. orange zest
1/3 c. maple syrup
2 Tbsp. tapioca flour
1 c. water
Juice of one lime
1 tsp. rose water (opt.)

Cook elderberries and ginger in water on low for 30 minutes. Strain berries and ginger out of the liquid. Press the solid matter in a potato ricer to get all the good stuff. Add pears, orange zest, and maple syrup. Cook until pears reach desired softness. Mix tapioca flour in water, and add to the soup. Add remaining ingredients. Cook until thickened. We like this soup best chilled and garnished with a little whipped coconut cream. Elderberry is so good for the immune system. This is a nice light supper for someone who has been under the weather.
