Ingredients:
Ingredients:
zucchini flowers
peanut oil
flour
salt

Directions:
Directions:
Clean flowers by removing the pistil inside and the hard part on the end. Wash the flowers under running water and dry them gently with a paper towel.

Prepare a batter with flour, water and salt. The consistency should be quite liquid.

Heat oil in an iron frying pan. When the pan is hot coat the flowers one by one in the batter. Remove the excess batter with your fingers before frying. Fry for a few minutes, turning them over once. The flowers will be rigid when ready. They should be crispy on the outside, but soft on the inside.
Dry with a paper towel and serve hot.

Personal Notes:
David and I made these with Patrizia Cantini (Florence, Italy Cooking Class - May 2018). They never made it to the table. They were so fresh and delicious, we could not wait.
