1 lb. elbow macaroni
kosher salt
12 oz. can evaporated Milk
2 lg. eggs
1t. hot sauce
1t. ground mustard
1 lb. extra sharp cheddar cheese, grated
8 oz. american cheese or velveeta cheese, cut in cubes
1 T. cornstarch
8 T. butter - cut into 4 pieces

Directions:
Directions:
Put macaroni in large pan with salted water. Cover pasta with at least 2" of water. Bring to a boil on high, stirring occasionally. Once at a full boil remove from heat and cover for about 8 minutes till al dente.

While the pasta is doing its thing whisk together milk, eggs, hot sauce and mustard in a bowl. In a separate bowl toss both cheeses with the cornstarch until evenly disbursed.

Drain pasta and return to pan and put on low heat, stir in butter till melted. Add milk mixture and cheese and cook, stirring constantly until the cheese is completely melted. Season to taste with additional salt and hot sauce.

Serve immediately.
