Thick cut Steak (make it a good one people)

Place parchment paper on jelly roll pan and then a rack. Generously salt and pepper both sides of steak. Place on rack and bake at 250º till it reaches 110º-115º internal temperature. At this point finish it off on the grill to 130º, which is mid-rare, or whatever your preference is. Perfectly done every time!
