3/4 LB MINCED CLAMS OR 2 6.5 OZ CANS OF MINCED CLAMS
1 CUP ONION FINELY CHOPPED
1 CUP CELERY FINELY DICED
2 CUP POTATOES FINELY DICED
3/4 CUP BUTTER
3/4 CUP FLOUR
1 QUART HALF & HALF OR MILK
1 1/2 TEASPOON SALT
1/2 TEASPOON SUGAR
FEW GRAINS OF COARSE PEPPER

DRAIN JUICE FROM CLAMS AND POUR VEGETABLES IN MEDIUM SAUCE PAN. ADD ENOUG WATER TO COVER AND SIMMER UNTIL POTATOES ARE DONE. (ABOUT 20 MINUTES) MEANTIME: MELT BUTTER, ADD FLOUR, AND BLEND. COOK A MINUTE OR 2 ADD CREAM AND COOL AND STIR UNTIL SMOOTH. ADD UNDRAINED VEGETABLES AND CLAMS AND HEAT THROUGH. SEASON WITH SALT, PEPPER & SUGAR.
