2 Cups Flour..............................................1-½ Cups Oil
2 tsp Baking Powder..................................4 Eggs
1-½ tsp Baking Soda.................................2 Cups Grated Carrots
1-½ tsp Salt...............................................1 8 oz crushed Pineapple
2 tsp Cinnamon.........................................½ Cup chopped Nuts
2 Cups Sugar............................................½ Cup flaked Coconut

Directions:
Directions:
Preheat oven to 350º Sift together dry ingredients. In a large mixing bowl beat sugar, oil and eggs. Mix in dry ingredients, then the rest of the ingredients. Pour into 3 greased and floured 9" round pans. Bake for 35-40 minutes. Cool for a few minutes then remove and cool completely on racks.
Frost with Cream Cheese Frosting: 1 stick real butter, 8 oz cream cheese, 1 tsp vanilla and 1 lb powdered sugar.***Raisins optional in the cake.
