Pecan Pie Recipe

Pie crust:

1 1/4 cups all-purpose flour
1/4 teaspoon salt

1/2 cup butter, chilled and diced
1/4 cup ice water

Filling:

3 eggs
1 Cup light corn syrup
1 Cup light brown sugar
1 tsp molasses
⅓ Cup melted butter
1½ chopped or halved pecans
1 tsp vanilla
pinch salt

Pie crust:

In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 4 hours or overnight.

Roll dough out to a 10 inch circle. Press the dough evenly into the bottom and sides of the pie pan. Flute the edges between your thumb and fingers, or use a fork to crimp edges to top of pie pan and trim any excess crust.

Filling:

Preheat oven to 350º. Beat 3 eggs well, and add other incredients (adding pecans last) and pour into prepared pie crust. Bake for 45-50 minutes or until top forms a little crust.
