6 cups rolled oats
1 cup wheat germ
¼ cup non-fat milk
1/3 cup brown sugar
¼ cup shredded unsweetened coconut
1 tsp cinnamon
1/3 cup honey
¼ cup oil
1 tsp vanilla extract

Any combination of the following to make 4 more cups:
Chopped nuts or sesame seeds
Sunflower seeds or pumpkins seeds
Ground flax seed
Dried fruit: Raisins, cranberries, apples, bananas or dates

Preheat oven to 350º.

Toast rolled oats for 10 minutes.

While the oats are toasting combine all the dry ingredients except the dried fruit. (I find the fruit gets too dry if baked with the other dry ingredients so I add it for a short period of time at the end of the baking time.)

Heat the oil and honey briefly in the microwave. Stir in vanilla.

Combine the toasted oats with the other dry ingredients in a large bowl. Stir in the wet mixture.

Turn the mixture into two oiled shallow baking pans and spread out evenly. Bake for 20 minutes, stirring every 5 minutes.

Add the dried fruit to the baking pans, stir and bake another 5-10 minutes, until the mixture turns a golden brown.

When completely cooled, store in a tightly covered jar or canister. If the weather is warm or humid, keep in the refrigerator; otherwise this granola will keep for about a month on the pantry shelf. Do not freeze.
