1 c sugar
8 c water
2 c long grain white rice, uncooked
1 Mexican cinnamon stick ( 3" long)
1/2 t vanilla extract
2 oranges -
(Finely grated zest and juice of 1 orange
plus additional orange for garnish)

Directions:
Directions:
1. Combine sugar and water in a large 2 qt. seal-able pitcher and stir until the sugar is dissolved. Add the rice and cinnamon stick seal and refrigerate overnight.

2. The next day, stir in vanilla, orange zest and juice.

3. Transfer the mixture to a blender and process to a fine puree. You may need to do this in batches, depending on the size of your blender. Strain the puree through a fine sieve. ( maybe more than once)

4. Serve the Horchatta over ice garnished with orange wheels and a sprinkle of ground cinnamon. Keep the mixture stirred up. It may tend to get settlement at the bottom.

I won a little prize for this at the Women's Club "Iron Chef" contest. I should not mention that I was the only entry in the non-alcoholic beverage category. Even if, it is a very tasty and refreshing drink.
