1 CUP BUTTERMILK
4 EGGS
2 TEASPOON COCONUT EXTRACT
1/2 TEASPOON BAKING SODA
1 CUP COCONUT (ANGEL FLAKE)
1/2 TEASPOON BAKING POWDER
1/2 TEASPOON SALT
3 CUPS FLOUR

GLAZE
1 CUP SUGAR
1/2 CUP WATER
2 TABLESPOONS BUTTER
1 TEASPOON COCONUT EXTRACT

PRE-HEAT OVEN TO 325

COMBINE SUGAR, BUTTERMILK, EGGS, OIL, & EXTRACT. MIX WELL. ADD FLOUR, BAKING SODA, BAKING POWDER, & SALT. MIX WELL. AND ADD COCONUT. POUR INTO 2 GREASED LOAF PANS AND SPRINKLE EXTRA COCONUT ON TOP IF DESIRED AND BAKE FOR 1 HOUR.

GLAZE
HEAT INGREDIENTS IN A SAUCE PAN OVER MEDIUM HEAT UNTIL SUGAR IS DISSOLVED. PUT BAKED LOAVES ON THE RACK OVER WAX PAPER TO CATCH EXTRA GLAZE. POLE HOLES IN THE BREAD AND POUR GLAZE OVER IT. LET IT SOAK IN. POUR MORE AS IT SOAKS IN UNTIL GLAZED TO YOUR LIKING.
