1 c. butter
1 egg
2/3 c. granulated sugar
1 t. vanilla extract
1/4 t. almond extract
2 c. all-purpose flour
2/3 c. almond flour
1/4 t. salt
1/2 c. seedless raspberry, or mango peach preserves (or some of each)

1. Cream together butter and sugar in the bowl of a stand mixer, fitted with the paddle attachment. Scrape down the bottom and sides of the bowl.
2. Add egg, vanilla and almond extract and beat to combine.
3. In a separate bowl, whisk together the flour, almond flour and salt. Add to the butter mixture. Beat to incorporate.
4. Divide dough into two equal parts. Shape into disks and flatten. Wrap in plastic wrap and refrigerate for 2 hours.
5. Roll the dough into 1/8" thickness. Cut equal amount of rounds, using a cutter without the insert and with the insert to make a hole in the center. Transfer to a parchment paper lined baking sheet. Keep rolling out the scraps and cutting rounds until the dough is gone. Refrigerate 15 - 30 minutes.
6. Preheat oven to 350º. Bake cookies for 10-12 minutes, until the edges are barely golden (or not even golden). Do not over bake. Cool cookies for 2 minutes on the baking sheet, then transfer to a cooling rack.
7. Heavily dust the top parts (the ones with the center hole) with powdered sugar. Spread about 1 t. of the preserves to the bottoms of the other cookies (the ones without the center hole). Sandwich them together.

These cookies are very easy to make, but a bit delicate so will need patience in handling them. They are also time consuming due to refrigeration time and assembly time. They keep well in a single layer in a seal tight container. These cookies have become a new Christmas cookie favorite!
