1-1/2 C. Oil
2 C. Sugar
3 Eggs
2 tsp. Vanilla
3 C. Flour
1 tsp. Baking Soda
1 C. Pecans, chopped
1 C. Coconut
3 C. Apples, grated
Optional: 1 C. Raisins

Glaze:
1/2 C. Buttermilk
1/2 Stick Butter or Margarine
1/2 C. Brown Sugar

Directions:
Preheat oven to 340°.
In a large bowl mix oil, sugar, eggs and vanilla. Mix well and add the dry ingredients that have been combined together. Batter will be thick. Stir in the chopped pecans, coconut and apples. If using raisins (don’t know why anyone would) stir them in at this time as well. Spoon into a greased and floured Bundt pan and bake for one hour and 10 minutes.

Glaze:
Mix all ingredients together in a sauce pan at medium heat and bring to a boil. Simmer for two minutes. Pour onto warm cake.
