1 C. Shortening
1 C. Brown Sugar
1 C. Sugar
2 Eggs, beaten
1 tsp. Vanilla
1-1/2 C. Flour, sifted
1 tsp. Salt
1 tsp. Baking Soda
2-1/2 C. Oatmeal
1 C. Pecans, chopped

Optional:
6 oz. Chocolate Chips
6 oz. Butterscotch Chips

Directions:
Directions:
Preheat oven to 350°.
Cream together shortening and the two sugars and mix well. Blend in beaten eggs and vanilla. Add dry ingredients and mix well. Add oatmeal and nuts and mix well. Form into rolls/logs and chill thoroughly. Cut 1/4” thick slices and bake on greased cookie sheet 10 minutes.
