1 1/4 c flour
2 Tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/3 c or more buttermilk
1 egg
1 Tbsp oil

Directions:
Directions:
Mix buttermilk, oil, and eggs together. Set aside. Mix dry ingredients. Pour buttermilk mixture into dry ingredients. Pour buttermilk as needed to make pouring consistency. Pour onto hot griddle. Don't flatten the pancakes as they cook! Let them bubble up and turn the heat down as buttermilk pancakes take a little longer to cook. Don't put in too much buttermilk or they will be doughy. The batter should be somewhat thick, but not runny.
