10 lbs Tomatoes, Peeled and Cored
3 Medium Onions, Finely Chopped
3 Cloves Garlic, Minced
3 Tbsp Olive Oil
1½ tsp Oregano
2 Bay Leaves
1 Tbsp Salt
1 tsp Black Pepper
½ tsp Crushed Red Pepper
1 tsp Sugar

Directions:
Directions:
Cook chopped onion and garlic in oil in large saucepan until tender; do not brown. Chop peeled and cored tomatoes in food processor or blender. Add tomatoes, oregano, bay leaves, salt, peppers, and sugar to onions and garlic. Simmer about 2 hours, stirring occasionally. Prepare home canning jars and lids. Press tomato mixture through a food mill and press out liquid and pulp. Discard seeds. Return to large saucepan and cook uncovered over medium-high heat until sauce thickens. Stir frequently to prevent sticking. Carefully pour hot sauce into hot jars, one jar at a time, leaving ¼ inch head space. Wipe jar rim clean, place lid on and screw band down evenly and firmly. Place closed jar in canner. Repeat for each jar. Process half pints 30 minutes in a boiling water bath canner. Yields 5 half pint jars.
