½ cup olive oil
1 cup flour

2 medium onions - chopped
1½ cups celery - diced
3 cloves garlic - minced
1 pound Italian sausage
1 pound shrimp
3 tablesppons Creole seasoning
2 teaspoons thyme
1 quart water or chicken stock
3 cans (28 oz) stewed tomatoes
4 pounds chicken drumsticks
Dried red pepper flakes to taste
2 bay leaves
1 pound frozen okra
1 pound crab

Directions:
Directions:
Make roux by mixing oil and flour. Cook in pot stirring often until it gets dark reddish brown in color. Remove from heat and add onion, celery and garlic. Stir.

In large pot add water or stock, tomatoes, chicken and all seasonings. Bring to boil and then simmer until chicken is cooked.

Brown sausage in fry pan and drain grease. Add to broth.

Add okra to broth.

When chicken is done, add shimp and crab and cook for 10 minutes.

Serve with rice.
