2 ears corn
2 tsp butter
1/4 cup chopped onion
1/4 cup chopped bell pepper
1/4 tsp ground cumin
1/8 tsp salt
1/8 tsp pepper

Directions:
Directions:
1. Remove husks from corn; scrub silks from corn. Cut kernels from ears of corn; set corn aside. Discard cobs.
2. Melt butter in skillet over medium heat. Add onion and bell pepper; cook, stirring constantly, 3 to 4 minutes or until crisp-tender. Stir in cumin, salt, and pepper; cook 1 minute. Stir in corn; cook 5 minutes or until corn is crisp-tender, stirring frequently.

Yield: 2 (1/2 cup) servings

Nutritional info: 122 calories, 5g fat (3g sat fat), 20g carbs, 3g fiber, 3g protein
