1 (8.8 ounce) package precooked brown rice (such as Uncle Ben's Ready Rice)
1 cup frozen corn
1/2 cup chopped onion
1 Tbsp. butter
1/2 tsp ground cumin
1/4 tsp salt
1/4 tsp pepper

Directions:
Directions:
1. Microwave rice according to package directions.
2. While rice cooks, heat a large skillet over medium-high heat. Coat pan with cooking spray. Add corn and onion; cook 4 minutes or until browned, stirring constantly.
3. Add butter and cumin; cook 2 minutes, stirring constantly. Remove from heat. Add cooked rice, salt, and pepper; toss well.

Yield: 4 (1/2 cup) servings

Nutritional info: 191 calories, 5g fat (2g sat fat), 30g carbs, 3g fiber, 4g protein
