1 1/2 cups water
1/2 cup frozen corn
1 1/2 Tbsp. lime juice
1 tsp minced garlic
1/2 tsp salt
1/4 tsp pepper
1 cup couscous, uncooked
3/4 cup chopped tomato (1 medium)
2 Tbsp. chopped fresh cilantro

Directions:
Directions:
1. Combine first 6 ingredients in a medium saucepan; place over medium-high heat, and bring to a boil. Stir in couscous; remove from heat, and let stand 5 minutes.
2. Fluff couscous mixture with a fork. Add tomato and cilantro, tossing well.

Yield: 5 servings

Nutritional info: 144 calories, 1g fat (0g sat fat), 31g carbs, 2g fiber, 5g protein
