2 pounds potatoes, peeled and thinly sliced
1/4 cup butter
1 1/2 tsp minced garlic
4 Tbsp all-purpose flour
1 tsp salt
1/4 tsp pepper
1 1/2 cups 1% milk
1 1/2 cups reduced fat shredded cheddar jack cheese

1. Preheat oven to 350º.
2. Spray an 8x8-inch pan with cooking spray, then line half of the potatoes on the bottom of the pan.
Melt the butter in a small sauce pan over medium heat. Add in the garlic and cook for 1-2 minutes. Whisk in flour, salt, and pepper. Let cook another minute.
Turn heat to medium-low. Slowly whisk in the milk until smooth. Bring to a simmer to allow tho thicken. Stir in 3/4 cup cheese until melted and remove from heat.
Pour half of the sauce over the potatoes. Sprinkle about 1/2 cup cheese over top. Line the remaining potatoes over top, followed by remaining sauce and cheese.
Bake uncovered for 50-60 minutes, or until potatoes are fork tender and the top is golden brown.
