3/4 C. Shortening
3/4 C. Sugar
1 Egg, beaten
1 C. Cooked Carrots, mashed
2 C. Sifted Flour
2 tsp. Baking Powder
1/4 tsp. Salt
1 tsp. Vanilla
1 tsp. Orange Juice, fresh

Frosting:
Powdered Sugar
Butter
Orange Juice
Grated Orange Zest

Directions:
Directions:
Preheat oven to 350°.
Cream together shortening and sugar. Blend in each ingredient in the order listed, mixing well after each addition. Place dough by spoonful onto greased cookie sheet and bake 8-12 minutes, till browned. Let cool.

Frosting:
Mix powdered sugar with a little bit of melted butter, orange juice and orange zest to desired taste and consistency.
