1-1/2 cups cornmeal
2-1/2 cups buttermilk (regular milk with 2 tsp. vinegar)
2 cups flour
scant 1/2 cup sugar
1 tsp. baking soda
2 tbsp. baking powder
1 tsp. salt
2 eggs
1/4 cup vegetable oil
1/4 cup melted butter
2 cups grated sharp cheddar + 1 cup
1 tbsp. chopped, pickled jalapeno peppers

Directions:

Preheat oven to 425º.

In a large bowl milk, oil, butter, eggs, and cornmeal. (We want the cornmeal to soften). In another bowl combine the rest of the dry ingredients, plus the jalapenos and the cheese.

Spray muffin tins with baking spray. Scoop batter into muffin tins about 3/4 full, using large ice cream scoops if you have one. Top each muffin with a sprinkling of cheese.

Bake for 20 minutes. Enjoy!
